  1. Breakfast (7:00 – 9:00 a.m.)

  2. Mid-morning meal (10:00 – 12:00 p.m.)

  5. Dinner (8:00 – 10:00 p.m.)
    Either light — atole and bread — or rich, with guisados or a home-style mole.

  6. Late-night cravings (after 10:00 p.m.)
    Street food takes over: tacos al pastor, tortas, or quesadillas.

  7. The “Recalentado” (the next day)
    Leftovers turned into a feast.
